2014-2015      «ΠΑΜΕΔΥ: Πανελλαδική Μελέτη Διατροφής και Υγείας. Σχέδιο Δράσης για την Προαγωγή της Δημόσιας Υγείας στον Τομέα της Διατροφής».

Αντικείμενο εργασίας: Επίβλεψη, οργάνωση και διεξαγωγή των εργαστηριακών αναλύσεων της μελέτης για τον προσδιορισμό σε δείγματα αίματος βιοχημικών δεικτών που σχετίζονται με δείκτες υγείας.

Προσδιορισμός αντιοξειδωτικής ικανότητας και περιεκτικότητας σε πολυφαινόλες με χρήση φθορισμομετρίας και φασματοφωτομετρίας UV-VIS.

Αντικείμενο εργασίας: Σχεδιασμός και οργάνωση μελέτης, διενέργεια εργαστηριακών αναλύσεων. Αναλύσεις δειγμάτων αίματος: Προσδιορισμός αιμοσφαιρίνης με φασματοφωτομετρία UV-Vis, αιματοκρίτη με χρήση μικροφυγοκέντρου, συγκέντρωσης Na, K με χρήση ατομικής απορρόφησης και γλυκόζης με χρήση βιοχημικού αναλυτή. Αναλύσεις δειγμάτων ούρων :  Προσδιορισμός ειδικού βάρους με χρήση διαθλασίμετρου, οσμωτικότητας με χρήση οσμώμετρου, συγκέντρωσης Na και K με χρήση ατομικής απορρόφησης και συγκέντρωσης κρεατινίνης με χρήση βιοχημικού αναλυτή.

 2012-2013      «Ανάπτυξη in vitro μεθοδολογίας πέψης που προβλέπει τη γλυκαιμική απόκριση in vivo».

Αντικείμενο εργασίας: Ανάπτυξη μεθοδολογίας, ανάλυση δειγμάτων με χρήση φασματοφωτομετρίας UV-Vis, στατιστική ανάλυση των αποτελεσμάτων.

Αντικείμενο εργασίας: Ανάπτυξη μεθοδολογίας ανάλυσης πολυφαινολών και τοκοφερολών σε ελαιόλαδο με χρήση υγρής χρωματογραφίας υψηλής πίεσης (HPLC). Εφαρμογή της στον προσδιορισμό πολυφαινολών και τοκοφερολών σε δείγματα ελαιολάδου και εκτίμηση των αποτελεσμάτων της ανάλυσης.

 2010         «Εκτίμηση αναγκών και σχεδιασμός ενός δικτύου προαγωγής της υγιεινής διατροφής παιδιών και εφήβων σε επίπεδο κοινότητας».

Αντικείμενο εργασίας: Εκτίμηση των παραγόντων που επηρεάζουν την τροφική επιλογή σε δείγμα Ελλήνων μαθητών. Συμμετοχή στην ανάπτυξη ερωτηματολογίου διαιτητικών επιλογών για μαθητές νηπιαγωγείου και τεσσάρων πρώτων τάξεων του δημοτικού και ερωτηματολογίου γνώσεων διατροφής και συχνότητας κατανάλωσης τροφίμων για τις δύο τελευταίες τάξεις του δημοτικού.

Αντικείμενο εργασίας: Επίβλεψη, οργάνωση και διεξαγωγή της κλινικής μελέτης και διενέργεια των εργαστηριακών αναλύσεων. Προσδιορισμός γλυκόζης (χρήση βιοχημικού αναλυτή), ινσουλίνης (Elisa kit) και c-peptide (Elisa kit) σε δείγματα αίματος.

Αντικείμενο εργασίας: Απομόνωση πεπτιδίων γάλακτος με χρωματογραφία διήθησης μέσω πηκτής (gel filtration) και υγρή χρωματογραφία υψηλής πίεσης αποκλεισμού μεγέθους (size-exclusion HPLC) και μελέτη της επίδρασης αυτών στη βιοδιαθεσιμότητα του σιδήρου σε κυτταρικό (Caco-2 cells) και μη σύστημα. Μελέτη της επίδρασης των απομονωμένων πεπτιδίων γάλακτος στην έκφραση του δισθενή μεταφορέα μετάλλων DMT1 σε κύτταρα και ανάλυση της περιεκτικότητας των πεπτιδίων σε αμινοξέα με αέρια χρωματογραφία ιονισμού φλόγας (GC-FID). Αντικείμενο εργασίας: Απομόνωση πολυσακχαρίτη από χαρουπάλευρο και μελέτη των φυσικοχημικών ιδιοτήτων των παραγόμενων άρτων ελεύθερων γλουτένης με βάση το χαρούπι.

Konstantina Argyri is Assistant Professor in Clinical Dietetics with emphasis on Functional Foods at the University of Peloponnese. 

Following a BSc in Chemistry at the National and Kapodistrian University of Athens, she continued her postgraduate studies at the Agricultural University of Athens where she received a MSc in 2002 and a PhD in Human Nutrition in 2008. In the frame of her PhD studies, she conducted part of the scientific work for her PhD thesis at the University of Cornell in the U.S. and she received training at the Wageningen University in the Netherlands. She continued her scientific development as a Postdoctoral Research Associate at the Institute of Food Research in Norwich as a visitor, at the Agricultural University of Athens as a Researcher, at the Hellenic Agricultural Organization DEMETER as a Researcher and at the University of the Aegean as an Adjunct Lecturer (PD 407/1980) and as a Researcher until 2021. In 2022 she joined the Department of Nutrition and Dietetics at the University of Peloponnese.

Her research interests are focused in Nutrition, mainly in the study of bioactive compounds and functional foods and their health benefits. She evaluates health indices and their relationship with dietary and lifestyle habits in the Greek population. Her research activities also include the development of in vitro digestion methodologies that predict the glycemic response or iron bioavailability in vivo. She is an author of 27 scientific articles and 16 presentations in International Conferences. She has participated in 3 European and in 5 National Research Programmes. She is the author of two book chapters on Nutrition.
